1 cup sugar
⅔ cup pumpkin
1 tsp lemon juice
¾ cup flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
¼ tsp salt
1 cup finely chopped walnuts
Powdered sugar

Filling
1 cup powdered sugar
8 oz cream cheese
4 tblsp butter
½ tsp vanilla

Directions:
Directions:
In large bowl, beat eggs on high for 5 minutes, gradually adding sugar. Stir in pumpkin and lemon juice. In separate bowl, mix flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mix. Spread batter on greased and floured 10x15 jelly roll pan. Top with nuts and bake at 375º for 15 minutes. Cool for a few minutes, then turn over on a towel that has been sprinkled with powdered sugar. Roll up.

Filling
In medium bowl, beat all ingredients until smooth. Unroll cake that has cooled and spread filling. Roll cake up and keep chilled. Sprinkle with additional powdered sugar if desired.
