2 lbs. sweet potatoes
2/3 cup packed light brown sugar
6 tablespoons butter, cut into small pieces
2 cups mini marshmallows

Directions:
Directions:
prepare the sweet potatoes by cutting a horizontal line around each potato, make sure not to cut deeper than the skin. Place them in a pan and cover with water. Boil for about 5 mins. Remove from pan and run cold water over them. Let sit a few minutes to cool off the peel will just slide off. Cut potatoes into cubes. Sprinkle the potatoes with brown sugar and dot with butter. Cover the dish and bake for 25-30 minutes or until soft. Turn the oven to broil. Remove the potatoes from the oven and sprinkle the marshmallows on top. Place under the broiler for a minute or two, just until the marshmallows turn light brown.
