2 8-oz. jars marinated artichokes, drained and chopped, reserve oil
1 medium onion, finely chopped
1 large clove garlic, minced
1/2 to 1 c seasoned bread crumbs
4 eggs
8 oz. grated cheddar cheese
2 Tbs. minced parsley

Directions:
Directions:
Preheat oven to 350º. Beat eggs well and set aside. Saute onions and garlic in 1/4 c oil from artichokes. Let cool. In large bowl, mix all ingredients together with bread crumbs and cheese. Press into 7x9 pan and bake for 30 minutes. Cut into squares and serve.
