2 c. shredded zucchini
3 eggs
1 c. salad oil
2 c. sugar
3 tsp. vanilla
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tbsp. cinnamon
c. chopped nuts
c. raisins(soaked in hot water)

Directions:
Directions:
Shred zucchini and mix with eggs, oil, sugar and vanilla. Blend well. Sift together all the dry ingredients. Add to zucchini mixture. Stir only long enough to be well moistened. Fold in nuts and raisins. Pour batter into 2 greased and floured 9x5x2 inch loaf pans. Bake at 350, for 50 - 60 minutes or until loaf tests done.
