1 c yellow cornmeal
1 c all-purpose flour
1 T baking powder
½ c sugar
1 tsp salt
1 c milk
2 eggs
½ stick butter (melted)
¼ c honey

Directions:
Directions:
Preheat oven to 400º. Line a 12 cup muffin tin with paper liners.
In a large bowl mix the first 5 ingredients.
In another bowl mix the milk, eggs, melted butter, and honey until well incorporated.
Add the wet ingredients to the dry and stir together until just mixed.
Evenly divide the batter into the 12 muffin cups (I use a round ice cream scoop).
Bake for 12-15 minutes until golden.
