2 cups sugar
2/3 cup evaporated milk
2 tablespoons light corn syrup
2 tablespoons butter
2 teaspoons vanilla
2 cups chopped pecans

Directions:
Directions:
In a medium saucepan, combine sugar, evaporated milk and syrup. Stirring constantly, bring to a rapid boil, until mixture reaches soft ball stage* (235 to 240 F).

Remove from heat, and add butter, vanilla and pecans. Stir vigorously, until mixture loses its shine, approximately 5 minutes.

Drop mixture by spoonfulls onto wax paper. Let it set until pralines harden, approximately 15 - 20 minutes.

*Soft ball stage small amount of mixture dropped in glass of cold water (tap is fine) forms a soft ball

Pralines are best made when the humidity is below 85%, otherwise, the cooking and setting time increases dramatically.

These candies are another recipe that are a hit everywhere. I have yet to meet anyone who doesn't fall in love.

My mom got the recipe from a friend's wife. Way back in the day, my mom and dad went to dinner at a friend's house. Mom helped the wife clear the table, and the wife started making the pralines. Within a few minutes, the lovely confection was set and ready, and the wife happily gave mom the recipe. It's been a family favorite ever since. I think it was one of the first recipes my mom taught me,

It really is an easy recipe to make, but, at least where I live, it's easier to make it in we laughingly call winter - when the humidity occasionally dips below 85%, and the temperatures dip below the 80s.
