lb of Velveeta cheese, cubed
cup butter
16 oz frozen California vegetables (baby if possible)
1 cup crushed Ritz crackers, about 1 sleeve

Directions:
Directions:
Thaw and drain vegetables, place 1 quart casserole dish.

Heat cup butter, and cubed cheese over medium heat, stirring constantly, until completely melted and smooth.
Pour cheese sauce over vegetables and stir slightly.

Heat cup butter over medium heat and stir in crackers, mix well.
Sprinkle mixture over the vegetable mix.

Bake uncovered at 350 for 20-25 minutes.

Original recipe called for American cheese and Club crackers, but we preferred it with Velveeta and Ritz.
