Chicken Curry Recipe

3 lbs. boneless, skinless chicken, cubed
1 small onion, diced
6-7 garlic cloves, diced
3 tbsp. oil
1 tsp pepper
1 tsp salt
1 tsp crushed red pepper
4 tsp curry powder
1 cup water

Mix curry powder, ˝ cup of water, and garlic to make a paste.

Sauté onions in oil over high heat in large skillet.
Add paste to pot and mix, reducing heat to medium.
Add chicken, salt and pepper.
Stir until well mixed and cover.
Cook for 10-15 minutes, stirring occasionally.

Add red pepper flakes and ˝ cup of water, reduce temperature to a simmer and recover.
Simmer for 20 minutes or until sauce has cooked down.
