40 cups Tomatoes 20/10
8-9 Onions 4/2
3-4 green peppers 2/1
2-3 red peppers 1 1/2 / 3/4
9-10 jalapeņos 3/ 1 1/2
4-5 cloves of garlic 2/1
1 cup sugar 1/2 / 1/4
1 tsp cayenne pepper 1/2 / 1/4
4 tsp cumin 2/1
4 tbsp salt 2/1
2 cups apple cider 1/ 1/2

Directions:
Directions:
Chop everything really small.
Cook in a dutch pan 3-4 hours if doing full recipe, 2 hours for half and 1 hour for quarter of recipe.
Use immersion blender to desired consistency.

To make more spicy add more jalapeņos:)

Place salsa in prepared jars and add to water canner for 10 minutes.
Remove and let cool.

This a wonderful Salsa recipe shared by Dara.
I like to use half regular onions and the other half sweet onions, makes a nice sweet taste. Very good served warm.
