Ingredients: 2 (8oz each) packages cream cheese, softened
1 (1oz) package ranch dressing mix OR taco seasoning
2 green onions, minced
4 flour tortillas
½ cup red bell pepper, diced
½ can minced green chilies
½ cup shredded cheddar cheese
1 (2oz) can diced black olives (optional)

Directions: |
Directions:Combine cream cheese, seasoning and green onions. Spread this over each tortilla to within ¼ inch of the edge. Sprinkle red pepper, chilies, cheese and olives over the cream cheese mixture. Roll up tortillas and wrap tightly in plastic wrap or aluminum foil.
Chill for at least 2 hours or overnight. Slice off the jagged ends (and save for dad because he already called dibs), and then slice into 1 inch slices. |

Notes: I've only ever used this recipe as a base and each time they're a little different. Feel free to switch it up if you don't have all the ingredients, or want to use a flavored cream cheese rather than ranch or taco seasoning. This one is easy to change it into what you want!
