10 C Chopped Zucchini
3 C Chopped Onion
3 1/2 C Chopped Green Pepper
1 Chopped Red Pepper
5 Tbsp Salt
6 - 8 C Tomatoes
1 tsp Garlic Powder
1 C Sugar
1 Tbsp Corn Starch
2 tsp Dry Mustard
1 tsp Tumberic
2 C Vinegar
1 Tbsp Cumin
1 Tbsp Red or Cayenne Pepper

In a large bowl, mix zucchini, onion, green pepper, red pepper, and salt. Stir, then store in refrigerator overnight. Then rinse and drain, add to a large stockpot.

Add the rest of the ingredients to the stockpot, bring to a boil. Boil 30 minutes. Process in glass bottles.
