Brine
2 cups water
2 cups white vinegar
2 cups sugar
1 tsp salt

3 1/2 lbs dark red beets
1-2 large yellow or white onions

Directions:
Directions:
Wash beets, Make sure to leave root on and cut leaves within 1 inch of beet.
Place in large kettle and cover with water.
Bring to boil.
Cook until tender.
When cooked, drain, cool and remove skins. Gloves maybe a good idea to prevent staining on hands. Slice beets.
Combine all brine ingredients and let simmer on stove.
Use sterilized jars and start large water bath(canner) heating in preparation.
Slice onions and place in bottom of sterile jar.
Place sliced beets in the jars. Beets can be sliced straight into the jars.
Top sliced onions in top of jar when done filling with beets. leave about 1 1/2 inch space at top of jar.
Bring brine to boil and fill each jar with brine leaving 1/2 inch space at top of jar.
Clean top of jars with hot water, removing any drips or debris.
Place lids and rings on.
Place prepared jars in canner, make sure tops cover by at least 1 inch.
Process for 10 mins.
Remove jars, let cool completely before touching.
