1/2 c. butter
1/3 c. sugar
1 egg yolk
1/4 tsp. vanilla
1 c. + 2 T. flour
1/2 tsp. salt
1 egg white slightly beaten
1 c. flaked cocnut
perserves

Directions:
Directions:
Cream butter and sugar; continue beating until well blended. beat in egg yolk and vanilla. Sift together flour and salt; gradually add to creamed mixture. Chill dough at least an hour. Shape chilled dough into 1 inch balls. Dip balls in egg white, then roll into coconut. Place on cookie sheet and press slightly with thumb to create an indentation. Bake 20-25 minutes at 300º. Remove onto wire racks and cool. Fill centers with preserves.
