Green tomatoes

Directions:
Directions:
Slice tomatoes about ⅜ inch thick. Soak in salt water (about cup salt to 1 gallon of water). Let stand in salt water until slices are soft and will bend without breaking. This is so you can put large slices in small mouth jars. Drain off salt water. Pack in jars up to the neck of the jar. Put in 1 tsp. of salt and fill with plain water to inch from the top of the jar. Put on lids. Cold pack 10 minutes after water starts boiling. Do not pressure can.

To fry, drain off water and roll in flour and fry as fresh green tomatoes. Lay on a paper towel to absorb grease.
