Filling:
1-2 chicken breasts cooked and shredded or diced
1 can cream of chicken
1 onion, diced
1 c carrots, diced
4 celery stalks, diced
*optional other veggies (broccoli, peas, etc)
1/2 tsp celery seed
1/4 tsp pepper
1/2 tsp salt
1/4 tsp garlic powder

Pie Crust:
1 c plus 1 tbsp flour
½ tsp salt
⅓ c shortening
3 to 5 tbsp ice cold water

Mix all filling ingredients together.

For pie crust: mix flour and salt. Cut in shortening with a fork until mixture forms coarse crumbs the size of small peas. Sprinkle with water 1 tbsp at a time until all flour in moistened and pastry almost leaves side of bowl. (1-2 tbsp of water can be added if necessary). Shape pastry into a ball. Refrigerate for 45 minutes before rolling. Makes 4 mini pot pies or 1 large pot pie.
