Blender Lemon Pie Recipe

4 large eggs
1/2 c unsalted butter, melted
1 lemon
1 1/4 c sugar
1 tsp vanilla extract
1 frozen pie shell
powdered sugar, garnish

1. Preheat oven to 350 F
2. Prepare lemon. Zest the lemon, remove rind, cut into slices with seeds removed
3. Place eggs, butter, lemon slices and zest, sugar, and vanilla extract into blender and pulse until mostly smooth
4. Pour lemon filling into frozen pie shell and bake for 45 minutes, or until set
5. Remove from oven and let cool completely, then dust with powdered sugar before serving
