3 Tbsp. olive oil
1 onion, finely chopped
3 green peppers, chopped
2 can fire-roasted tomatoes
4 cloves garlic, chopped
3 green onions, chopped (2 for cooking, 1 for garnish)
1/2 tsp. kosher salt
6-8 eggs
1/4 tsp. black pepper

Directions:

Heat olive oil in a large cast-iron skillet. Add in onion and green peppers, saute until tender. Add in tomatoes, garlic, and green onions, simmer for 15-20 minutes, stirring frequently, until tomatoes thicken. Sprinkle with salt and pepper. Using a spoon, make a well for each egg, one at a time, and crack the egg into a well. Cover and let simmer 8-10 minutes, until the eggs are set. Garnish with remaining chopped onion.

The original recipe said to simmer uncovered but I have found that it takes less time for the eggs to set if you cover the skillet while the eggs cook.
