c unsalted butter, softened
2 eggs, room temperature
c splenda
c sugar
1 large lemon, zest and juice
1 c mashed banana (~4 - 5 bananas)
2 c whole wheat pastry flour
1 tsp baking powder
tsp salt

Directions:
Directions:
Preheat oven to 350 F
Lightly spray bread pan with oil and lightly cover with flour

Using a hand held mixer, combine butter, sugar and splenda in a medium bowl until light and fluffy

Add eggs and beat until combined

Add bananas, lemon juice and zest and beat until combined and mostly smooth

In a separate bowl combine flour, salt and baking powder with a whisk to break up any clumps

Mix dry ingredients into wet ingredients with a spatula until just combined

Transfer batter into prepared pan

Bake ~ 50 to 60 minutes. Lightly cover with foil for last 20 minutes of baking to prevent top from over browning
