1 lb. lean ground beef
1 cup chopped onion
2 cups vegetables (carrots,celery, frozen baby Lima’s, green zucchini, peas)
1 small can tomato paste
1 tbsp. beef bouillon granules
1 cup water
2 tsp. sugar
⅛ tsp. ground red pepper
¼ tsp. salt
¼ tsp. black pepper
¼ tsp. garlic powder
¼ cup fresh parsley
½ cup chopped green onions (white and green parts)
6 oz. grated cheddar cheese

5 golden potatoes cooked and mashed w/butter/milk/salt

Preheat oven to 350 degrees. Lightly coat 12 x 8 baking dish with Pam spray.

In skillet cook hamburger and onion until brown and cooked through. Breaking up meat. Drain and discard fat.

Chop vegetables and boil in water until tender. Drain. In a bowl mix vegetables tomato paste, bouillon, water, sugar, red pepper, salt, pepper, garlic powder and parsley until blended. Add meat mixture.

Transfer mixture to prepared baking dish. Spoon potatoes evenly over all. Sprinkle green onion over it and then top with cheese.

Bake 25 minutes until bubbly.
