1 cup vegetable oil
2 ½ cup sugar
4 whole eggs
4 ripe whole bananas
½ tsp. salt
4 c. all purpose flour
2 tsp. baking soda
1 T. cinnamon powder
½ teaspoon nutmeg powder
⅔ cup buttermilk

Directions:
Directions:
Heat oven at 350º. Spray and flour loaf pan. Beat the oil and the sugar. Add the eggs and scrape the bowl well. Add the peeled bananas and beat until they break up in the mixture. Sift the salt, flour, baking soda, cinnamon powder and nutmeg. Alternate adding the dry ingredients with the buttermilk to the banana mixture. Scrape the bowl well again.

Add the mixture to the pan and bake at 350º for 30 to 45 minutes.
Test with a toothpick. Insert the toothpick into the middle of the bread. When the toothpick comes out clean, the bread is ready.
Allow bread to cool in the pan before removing. Makes 1 loaf.
