1 C. Rolled Oats
¼ C. Oat Flour( you can just run your whole oats through a blender until they are fine to make this flour)
¼C. Almond Flour
¼ C. Wheat Flour
¾ C. Bread Flour(this helps to lighten it up a bit)
⅓ C. Granulate Sugar
1 T. Baking Powder
½ tsp Salt
1 C. Milk
1 Egg
¼ C. Oil( I use Olive Oil or Avocado Oil)
¾-1 C. Blueberries(Fresh, not frozen or dried)
1 tsp. Vanilla

Directions:

Preheat the oven to 425º.

1. Combine Rolled Oats, Oat Flour, Almond Flour, Wheat Flour and ½ C. Bread Flour(saving ¼ to coat blueberries with).

2. Combine Milk, Egg, Oil, and Vanilla.

3. Add the wet ingredients to the dry ingredients. Mix well.

4. Place the blueberries in a small bowl, add the remaining ¼ C. of flour, stir until blueberries are coated with the flour. (this helps them to not sink to the bottom of the muffins).

5. Fold in blueberries.

6. Either spray a cupcake tin or line each space with a cupcake cups. Fill each cup ¾ full. Place in oven and bake for 20-25 minutes, or until a toothpick placed in the middle of the muffins comes out clean. Remove from oven and allow to cool in the pan 10 mins, then remove them to complete cooling, or enjoy them now!

I am a sucker for a good blueberry muffin, however, I have found myself getting a little "fluffy" in the middle... so I thought I would change up your standard blueberry muffin recipe, and make it a healthier version.
I have to say, with all the different flours, you get a wonderful depth of flavors that you don't get from the good old style blueberry muffin.
So, if you are like me, and you are looking to keep and old standard, but give it a healthy face lift..this is the recipe to try!
