12 oz. dried apricots
29 oz. diced tomatoes, drained
1 1/2 c. white onion, chopped
3 cloves garlic, minced and pressed
1 c. honey
1/2 tsp. white vinegar
1 tsp. kosher salt
1/2 tsp. black pepper
1/2 tsp. allspice
1/4 tsp. paprika

Directions:
Directions:
Place dried apricots into a medium pot with 2 cups water. Bring water to a boil, cook for 5 minutes, then remove from heat and cover. Let sit 15-20 minutes or until very soft. Drain.

In a large pot, combine apricots, tomatoes, garlic, and onion. Bring to a boil, then simmer for 30-40 minutes or until mixture has become very soft and mushy.

Puree in a food processor or blender, and then press through a fine-mesh sieve. Discard pulp.

Place puree back into the large pot with remaining ingredients. Simmer 30-40 minutes or until the mixture has thickened up and is the consistency of ketchup.

Can be served chilled or at room temperature.
