3 C. Rolled Oats
2 ½ C. Pecans and Pumpkin Seeds
1½ tsp. Salt
¼ tsp. Cinnamon
½ tsp. Cardamom
½ C. Olive Oil
½ C. & 1 T. Pure Maple Syrup
1 tsp. Vanilla
¾ C. Dried Blueberries

Preheat oven to 350º.

1. Mix together oats, nuts, seeds, salt, cinnamon, and cardamom in a med-large bowl.

2. Whish together oil and maple syrup. Pour over the dry mixture and toss to coat.

3. Spread on a parchment lined baking sheet. Place in the oven and bake for 35-40 mins, stirring every 15 minutes

4. Remove and let cool completely, then add the dried fruit and toss to combine. Store in an air tight container.

I decided to make this when my fella and daughter really got into eating granola. I found that it was way more fun to make our own, and choose the ingredients I know they liked.
This is now one of their favorite granolas ever! Sometimes, to shake things up, I will added toasted coconut, or dried cherries to the mix.
Don't be afraid to branch out and try your own flavor combinations.
