1 pouch mashed potato mix (roasted garlic preferably)
2 T butter
1/2 c milk
3 slices bacon
3/4 c shredded cheddar cheese
1 large egg
2 T chopped chives
1 ½ c panko bread crumbs
4 c vegetable oil

Directions:
Directions:
Cook mashed potatoes with milk and butter according to pkg directions. Let cool to room temp.

Cook bacon until crispy. Drain on paper towels. Once cool, crumble into bits.

In large bowl combine potatoes, cheese, egg, chives and bacon. Mix and roll into 1" balls. Toss in bread crumbs. Set aside to rest for 15 mins.

Heat oil in large wide pot. Gently lower balls into oil and fry until golden all over. Continue frying in batches and set aside to drain on paper towels.

Serve immediately
