4 slices bacon, cut into 1/2 inch pieces
1 T butter
2 eggs, beaten
1/4 t pepper
1 can buttermilk biscuits
2 oz cheddar cheese, cut into ten 3/4 inch cubes

Egg wash:

1 egg
1 T water

Directions:

Cut two 8" rounds of parchment paper. Place one round in bottom of air fryer basket and Spray with cooking spray.

In 10" nonstick skillet, cook bacon until crisp and drain. Wipe out skillet.

Add butter to skillet and melt. Add 2 beaten eggs and pepper. Cook until eggs are thickened but still moist, stirring frequently. Remove from heat; stir in bacon and cool.

Meanwhile, separate dough. Spoon egg mixture onto center of each dough round. Top with cheese. Gently fold edges up and over filling. Pinch to seal.

In small bowl beat remaining egg and water. Brush biscuits on all sides with egg wash.

Place 5 biscuit bombs, seam sides down, on parchment in air fryer basket. Spray both sides of second parchment round with cooking spray. Top biscuit bombs and then top with remaining 5 biscuit bombs.

Set fryer to 325 and cook 8 mins. Using tongs, carefully turn biscuits and cook 4 to 6 mins longer or until cooked through.
