2 ⅔ C. GF flour
¾ tsp. Xanthan Gum
1 C. lard (or vegetable shortening)
¾ tsp. salt
5 to 6 tbsp. ICE water

optional: ½ to 1 tsp.sugar

Directions:
Directions:
1) Cut lard into flour, salt and sugar.
2) Mix with pastry blender (or fork) until crumbly.
3) Slowly add in water. Mix together with hands.
4) Separate into 2 equal halves.
5) Roll out half on a slightly floured pastry sheet.
6) Roll out other half into a circle.
7) Cut slits into top to create vent holes.


NOTE: Hate your pie crust. Overworking crust will cause the crust to become tough.

Poppy's favorite pie is a blueberry pie made with lard. It was one way I worked my way into his heart was through my pies and pie crust. It was a huge affirmation to me every time he ranted and raved about my pies.
