3 cups flour
2 cups sugar
1-1/4 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 eggs
1 cup corn oil
3 tsp. vanilla
2 cups zucchini, shredded
1/2 cup nuts (optional)
1/2 cup raisins (optional)

Directions:
Directions:
Sift dry ingredients 3 times. Beat eggs in bowl. Add all other ingredients at once.
Mix and pour into 2 prepared loaf pans. Bake 325º for 1 hour.
