3 cups brussel sprouts washed and woody stem trimmed and cut in half lengthwise.
Two medium sweet potatoes (about 3 cups) peeled and cubed in 1/2 cubes
4 medium beets (2 cups) with tough end removed. Do not peel, cut into 1-inch cubes.
3 tablespoons olive oil
Salt and pepper to taste

Preheat oven 400 º
Place brussels sprouts, beets, and sweet potatoes in a bowl drizzle with oil. Toss vegetables then salt and pepper generously seasoning.
Place vegetables on cookie baking sheets, don't overload pan. Keep a little space between the veggies. Place in oven, Roast 40 minutes. Halfway through pull out pan and gently stir around to ensure even coating and brownies
