1 medium onion chopped, about 1 ⅓ c.
1 medium green pepper, chopped
1 large stalk celery, chopped
2-3 cloves garlic, minced
3 T, oil
4 lbs ground round
8 T, chili powder
1 T, ground cumin
2 t. garlic salt
½ t. Tabasco sauce
1 t. salt
½ t. pepper
1 12 oz can beer, or water
1 14 oz can stewed tomatoes
1 8 oz can tomato sauce
1 6 oz can tomato paste
1 4 oz can diced green chilies
1 bay leaf

Directions:
Directions:
Saute’ first 5 ingredients in oil. Add meat, drain fat.
Combine chili powder, cumin, garlic salt, Tabasco, salt and pepper with beer or water. Let it stand 1-2 minutes. Add beer or water and spice mixture to the rest of the ingredients in the pan.
Simmer, covered on low heat 3 hours, stir often. Remove bay leaf before serving.
