3 large Eggs
1C cake and pastry Flour
1tsp Baking Powder
1/4tsp Salt
1tsp Lemon Extract
1/3C Water
1tsp Vanilla
1C Sugar

Beat Eggs

Add Sugar gradually and beat well

Add extracts

Beat until thick and white

Add water while whipping

Sift Flour mixture into batter and fold into egg mixture

Butter a 15x11-inch pan and line with wax paper and butter again

Pour batter into pan

Bake 375F for 12-mins until golden and springy

Sprinkle icing sugar on tea towel and turn roll onto towel

Peel off wax paper and roll up jelly roll style

Let cool

Unroll and fill

Trim roll before filling
