1 large onion
⅓ c. chopped green pepper
¼ c. carrot
¼ lb. mushrooms, sliced
2 cloves of garlic, chopped
2 T. olive oil
1 ½ lbs lean ground beef
Optional: ½ lb. hot or mild Italian sausage (out of skin)
Optional: ½ cup sliced pepperoni
1 large can tomatoes
1 12oz can tomato paste
¼ cup ketchup (optional)
½ cup of red wine or water
2 T. Worcestershire sauce
¼ t. pepper
1 t. salt
1 t. sugar
1 t. oregano leaves
1 ½ t. basil leaves
1 t. chili powder
¼ to ½ t. dry hot pepper
1 bay leaf
¼ cup parmesan cheese

Directions:
Directions:
Sauté onion, green pepper, carrot, and garlic in olive oil until onion are transparent (about 5 minutes). Add ground beef and sausage, cook until meat is no longer red, drain meat.
Add tomatoes, tomato paste, wine or water, ketchup and all herbs.
Stir in mushrooms, parmesan cheese, all cooked meats and pepperoni if desired.
Cook slowly 3 or 4 hrs over low heat.
If sauce becomes too thick add a little water.

Serve over pasta, sprinkle with parmesan cheese
