2 T plus 2 t cornstarch
⅔ c sugar
1 large egg yolk
¼ c fresh lemon juice
½ T grated lemon zest
6 T fresh orange juice
½ t vanilla
1 t unsalted butter

Directions:
Directions:
In medium pan, stir together cornstarch and sugar, stir in egg yolk and lemon juice and zest, until smoothly incorporated. Add the orange juice and ⅓ c hot water. Bring mixture to a simmer over medium heat. Cook, stirring until mixture thickens and boils for 1½ minutes; remove from heat. Stir in butter and vanilla, until butter melts. Strain through a sieve into a storage container. Chill for at least 45 minutes or until cool.

Use as is to make a pie or tart, or fold in some beaten whipped cream to lighten.


**To make a lemon sauce: decrease the cornstarch by 2 teaspoons, and increase the hot water to ½ cup.
