1 cup butter
1⅓ cups sugar
1⅓ cups firmly packed light-brown sugar
1½ cups all-purpose flour
1 tsp. baking soda
2 large eggs
1 tsp. vanilla extract
3½ cups rolled oats
1½ cups salted peanuts
1 (6-oz.) package chocolate bits or M&M's™

Directions:

Preheat oven to 350º.

Cream butter and sugars with electric mixer at medium speed until light and fluffy.

Add eggs one at a time and incorporate thoroughly after each addition. Add vanilla extract.

Combine flour and baking soda, and gradually add to butter/egg/sugar mixture until thoroughly incorporated.

Stir in oats, peanuts and chocolate bits or M&M's™.

Drop dough onto cookie sheet (may line with parchment paper), leaving about an inch between cookies. Bake 7-9 minutes, or until edges turn light brown.

My paternal grandmother, who was a great baker, gave me this recipe. She could prepare dozens of biscuits at a time without ever measuring any ingredients and always used her hands to mix (as she could tell by the feel of the dough whether or not it was right). This recipe came to me as only a list of ingredients. She figured I knew how to prepare cookies.
