2 tbsp. oil
1 lb. spicy smoked sausage, sliced into ½ in. slices
1 large onion, diced
1 bell pepper, diced
3 celery ribs, chopped
4 garlic cloves, minced
2 bay leaves
1 tsp. dried thyme
1 tsp. dried oregano
2 tsp. Creole seasoning
1 (28-oz) can crushed tomatoes with juice
6 cups chicken broth
2 cups long grain rice
1lb. shrimp
4 green onions, chopped

Directions:
Directions:
Cook the sausage in a large Dutch oven. Remove to a bowl.
Cook the onion and the next 7 ingredients in drippings in pan until tender.
Stir in sausage, tomatoes, broth, and rice. Bring to a boil, then reduce heat and simmer 25 minutes or until rice is tender.
Stir in shrimp and heat through. Garnish with green onions.
