1 cup diced Canadian bacon or ham
¼ cup chopped green onion
3 tbsp. butter
12 beaten eggs
1 (3-oz.) can mushroom stems and pieces, drained
1 recipe cheese sauce
2 tsp. butter, melted
2¼ cups (3 slices) soft bread crumbs
⅛ tsp. paprika

Cheese Sauce
2 tbsp. butter
2 tbsp. all purpose flour
2 cups milk
1 cup shredded Velveeta™ or cheddar cheese

Preheat oven to 350º.
In large skillet, cook Canadian bacon (or ham) and onion in 3 tbsp. of butter until onion is tender but not brown. Add eggs and scramble just until set. Fold mushrooms and cooked eggs into cheese sauce. Turn into a 12x7x2-in. baking dish. Combine remaining melted butter, crumbs, and paprika; sprinkle atop eggs. May be baked immediately. Or, cover and chill until 30 minutes before serving. Bake uncovered for 30 minutes.

Cheese Sauce
Melt 2 tbsp. butter and blend in flour, ½ tsp salt, and ⅛ tsp pepper, stirring or whisking until smooth. Add 2 cups milk; cook and stir until bubbly. Add cheese and stir until melted. Remove from heat.
