¾ C diced cooked chicken
½ Tsp cornstarch
¼ Tsp salt
1 Tab vegetable oil
1 8oz. can water chestnuts, drained
1 C sliced mushrooms
½ Tsp salt
2 Tab vegetable oil
3 C cooked rice
1 Tab soy sauce
1 Tab chopped green onion
dash of white pepper

Directions:

Mix chicken, cornstarch and ¼ Tsp salt.

Heat wok or 12" skillet until very hot.

Add 1 Tab oil, rotate to coat all sides.

Add eggs, cook and stir until eggs are thickened thoroughout but still moist.

Remove from pan and set aside.

Heat pan until very hot, add 1 Tab oil, rotate to coat sides, add chicken, chestnuts, mushrooms and ½ Tsp salt, stir fry 1 minute.

Remove from pan.

Heat pan and add 2 Tab oil, coat all sides, add rice, stir fry 1 minute.

Stir in soy sauce.

Add chicken mix, eggs and remaining ingredients, stir fry 30 seconds.
