"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Scuppernong Grapes
Sugar

Directions:
Directions:
In a crock or glass jar with a large mouth, put a layer of crushed scuppernongs and a layer of sugar.
Let ferment 6 or 7 days. Strain and put back in clean jar. Let stand 3 or 4 days. Strain a 3rd time 3 or 4 days apart. Have sweet enough for an egg to float after 1st straining.
When finished fermenting put in bottles and seal with screw top.

For clearer wine I suggest in cloth finer weave than cheese cloth. Esp. for the last two or so.
