2 large chicken breasts cut into bite size pieces
4 cloves crushed garlic
4 tsp butter chicken spice
1 extra large can diced tomatoes
3 cups chicken broth
3/4 cup wild rice
3/4 cup quinoa
2 cups sliced carrots
2 cups small pieces cauliflower
1 can coconut milk

Directions:
Directions:
In a large pot heat coconut oil, add chicken and garlic. Cook til lightly brown, add butter chicken spice and cook for a few more minutes.
Add tomatoes, chicken broth, rice/quinoa, carrots, cauliflower and bring to a boil.
Turn heat to medium and simmer 15 minutes.
Turn heat to low and add can of coconut milk.
Add salt to taste and simmer and serve.
