Ingredients:  
1 boiled or pressure-cooked chicken ( or 6 chicken thighs with skin)
3 Ribs celery, chopped fine
1/2 onion, chopped fine
3/4 stick butter
1 grated potato
6-8 oz egg noodles (cooked tender)
16 oz chicken broth
1/2 tsp thyme
1/2 tsp oregano
salt & pepper to taste

Directions:
Directions:
Cook and de-bone chicken. Reserve chicken broth.
Saute onion in 3/4 stick butter.
Boil chopped celery in broth from chicken for approximately five minutes. Add sauteed onions & butter, canned chicken broth, grated potato. Add spices and simmer for 30 minutes. Add chicken and noodles and simmer until noodles are soft.
