½ c butter
1 medium onion, chopped
1 c. celery, chopped
2 garlic cloves, chopped
2 heads broccoli
7 c. chicken broth
2 c. processed cheese, cubed
2. c milk
1 c. water
¾ cup cornstarch

Directions:
Directions:
In dutch oven pan melt butter and sauté onion, celery and garlic. Wash and chop broccoli in to small pieces. Add broth and bring to a slow simmer and add broccoli. Simmer for about 15 minutes or until broccoli is tender. Reduce heat and add cheese and stir until melted. Add milk and stir. Combine cornstarch and water and stir into soup. Stir until thick.

Note: This is really an easy recipe and I like to use fresh broccoli. You could use frozen broccoli but be sure you drain it well. When serving you can top with more cheese, saltine crackers and or bacon pieces.
