1 Head Iceberg Lettuce
⅓ Head Romaine Lettuce
1 C. Artichoke Hearts (NOT marinated hearts)
1 C. Sliced Red Onion
1 C. Diced Pimento
⅔ C. Olive Oil
⅓ C. Wine Vinegar
1 tsp. Salt
¼ tsp. black pepper
⅔ C. grated Parmesan Cheese

Wash the lettuces, allowing to drain completely. Place lettuce in refrigerator to chill. When well chilled, Remove heart from iceberg lettuce, then tear lettuces into large pieces. Place in mixing bowl.

Open and drain artichoke hearts. Add 1 C. artichoke hearts to lettuce. Peel and slice red onion, add 1 C. to lettuce. Drain pimento completely, dice, and 1 C. to lettuce.

Measure olive oil, vinegar, salt, pepper and cheese (I whisk together in separate bowl) then add to lettuce. Toss until all is mixed completely.
