Ingredients: 24 oz cream cheese softened (8 3oz pkg or 3 8oz pkg)
4 egg whites
1 cup sugar
1 tsp vanilla
1 Tbsp butter to butter the pan
⅔ cup graham cracker crumbs
Topping
2 cups sour cream
2 Tbsp sugar
½ tsp vanilla

Directions: |
Directions:Cream the cream cheese together well. Beat until stiff 4 egg whites and blend 1 cup sugar a little at a time. Combine with cheese a little at a time, then add 1 tsp vanilla.
Butter pan well with 1 Tbsp butter and spread 2/3 cup graham cracker crumbs over the butter. Add cheese mixture and bake at 350º for 25 minutes.
Combine topping ingredients and carefully spread over the cheesecake and then bake at 475º for 5 minutes. Let cool and then chill before serving. |

Notes: You can add moms homemade strawberry jam, raspberry, or blueberry jam on top of the chilled cheesecake prior to serving. You could also drizzle chocolate or caramel over the top.
This was a special occasion dessert that mom would make and every one always asked for her recipe. Really good.
