¼ cup cashews
¼ cup almonds
1½ cup rolled oats
¼ cup unhulled sesame seeds
¼ cup sunflower seeds
½ cup unsweetened coconut
½ cup wheat germ
½ cup honey
¼ cup oil
3 tsp vanilla extract
Raisins optional

In a blender grind cashews and almonds into a coarse meal. Combine the nuts with the remaining ingredients (except the raisins) stir together until well combined.

Spread out on a cookie sheet and bake at 350º for ½ hour or until golden brown, stir frequently. If desired add raisins after cooking. Cool and store in an airtight container.

This recipe came from Eddie Phelps, a very kind woman I met on my mission. She would make a big Mason jar full of this granola for us to keep in our car to snack on while we were out tracting. It is also great with coconut milk over it for breakfast.
