1½ C. Sugar
½ Heaping C. Flour
⅛ tsp. Salt
1 T. Butter
1¼ C. Boiling Water
3 Egg Yolks, Beaten
1 Lemon, Rind and Juice
1 Baked Pie Shell

3 Egg Whites for Meringue

Directions:
Directions:
Mix sugar, flour, and salt. Gradually add hot water, stirring constantly. Boil until thickened.
Mix some of the hot mixture with the egg yolks. Pour yolks into mixture and cook another minute.
Remove from heat and add butter. When almost cool, add rind and juice. Pour into baked pie shell and cover with meringue. Brown lightly.
