2 cups flour
2 cups sugar
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1¼ cup salad oil
4 eggs
3 cups grated carrots
1 cup chopped pecans or walnuts

Frosting
1 8 oz pkg cream cheese
1 cube margarine
1½ box of powdered sugar
1 tsp vanilla

Directions:
Directions:
Combine sugar, flour, baking soda, baking powder, and cinnamon. Mix oil and eggs and then add to the dry mixture. Add nuts and carrots. Pour into 9x13 well greased and floured cake pan. Bake at 350º for 30-40 minutes.

Blend together the four frosting ingredients until smooth. Allow cake to cool and then frost.

Mom would make this for special occasions and we all loved it. Some people add raisins but none of us kids were really fond of them so mom never added them. You can also add crushed pineapple and it makes the carrot cake moist and adds a little different spin on it.
