2 C diced peeled potatoes
2 C water
½ C sliced carrot
¼ C chopped onion
¼ C butter, cubed
¼ C flour
2 C milk
¼-½ Tsp salt
¼ Tsp pepper
2 C shredded cheddar cheese
1½ C cubed fully cooked ham
1 C frozen peas

Directions:
Directions:
In a saucepan, combine potatoes, water, carrot and onion. Bring to a boil. Reduce heat; cover and cook until tender, 10-15 minutes.

Meanwhile, in another saucepan, melt butter. Stir in flour until smooth. Gradually add
milk, salt & pepper. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in shredded cheese until melted. Stir into the undrained potato mixture. Add ham and peas, heat through.
