4 c. apple cider
2 T. apple cider vinegar
4 T. unsalted butter; room temp
to taste: salt and pepper
4 stalks of celery; halved crosswise
4 carrots; peeled and halved crosswise
2 medium onions; peeled and halved
1 12-lb. turkey; patted dry
1 tart apple; halved (green)
8 sprigs of fresh thyme
8 sprigs of fresh sage

1. Heat oven to 375º.
2. Make cider glaze: in a large skillet, boil cider until reduced to about ¾ cups ~ 25-30 mins. Add vinegar, 2 T. butter, 1 t. salt and ½ t. pepper. Stir until butter is melted.
3. Meanwhile, in large roasting pan, scatter celery, carrots and onions. Add 1 c. water. Season turkey cavity with ½ t. each salt and pepper. Stuff with apple, thyme and sage. tie legs together with twine and tuck wings under the body. Place turkey on top of veggies, rub with remaining 2 T. butter and season with 2 t. salt.
3. Roast turkey for 30 minutes before covering with glaze. Baste every 30 minutes with pan juices for 2 hours. Continue roasting, basting every 15 minutes until temp reads 165º~30-60 minutes more.
* Tent bird loosely if it is browning too quickly while roasting. Add 1 c. water if the veggies start to scorch.
4. Use pan juices for your gravy. Transfer turkey to cutting board. Tent with foil; rest 30 mins-1 hour. Carve and enjoy!
