Ingredients: 1 lb dry red beans 2 T oil 14 oz Andouille sausage 1 yellow onion 1 green bell pepper 3 ribs celery 4 cloves garlic, minced 2 t smoked paprika 1 t oregano 1/2 t garlic powder 1/2 t onion powder 1/4 t black pepper 2 bay leaves 6 c water 1 T salt

Directions:The night before put beans in a large bowl with double the amount of water. Soak overnight in the fridge. Slice the sausage into rounds and cook in the oil in a large pot until browned. Remove the sausage and set in the fridge. Add the onion, bell pepper, celery and garlic to the pot. Cook until tender. Add the spices and cook for another minute. Drain and rinse the beans. Add to the pot with 6 c of water. Bring to a boil, cover and reduce heat. Simmer for an hour until beans are done. Stir often, but be sure and put the lid back on. Smash some of the beans against the side of the pot to thicken the beans. Leave the cover off and cook for another 30 minutes.Cook the rice during this last 30 minutes. Add the sausage and a t of salt to the beans. Add salt to taste.Serve with parsley and/or green onions. |
