4 Tilapia filets
1 lg or 2 medium vidalia onions sliced into ¼" (any onion will work)
2 medium tomatoes diced (or a jar of diced tomatoes)
4 Tbsp fresh basil chopped or 2 Tbsp dry
8 cloves garlic chopped
4 Tbsp EVOO (extra virgin olive oil)
12 Kalamata olives chopped or sliced

Directions:
Directions:
Defrost tilapia and preheat oven to 375º
Saute onion in EVOO until translucent.
Place fish over the onion slices in oven safe dish.
Sprinkle with olives, garlic, basil, and tomato.
Season with salt and pepper.
Place pan on center rack in oven uncovered for 12-15 minutes until fish is opaque.

**I also will often use a tin foil tent and place onion, fish, top with remaining ingredients and tent foil then put in toaster oven for 10 min or so until opaque.
