1 ½ T Olive Oil
2 - 7 oz. jars roasted sweet red peppers, drained, rinsed, patted dry and chopped
¾ C chopped onions
1 ½ tsp finely chopped garlic
2 ¼ C cider vinegar
1 ½ T sugar
¼ tsp cayenne pepper
¼ tsp dry mustard

Heat oil in skillet over medium high heat. Add red peppers and sauté for 2 minutes. Add onions and garlic. Sauté until onions are tender, stirring frequently, about 5 minutes. Mix vinegar and sugar in small bowl until sugar dissolves, then stir into red pepper mixture. Mix in mustard and cayenne pepper. Season to taste with salt. Continue cooking until all liquid has evaporated, stirring frequently. May blend in food processor for smoother relish if desired.
